Soybeans
A member of the legume family, Soybeans are an annual herbaceous plant, 1-1.5 meters tall.
Native to the Far East, they are a legume species native to East Asia. They have spread from East Asia to Europe, becoming a staple food source worldwide. Their relatively high protein content makes them a popular choice compared to other vegetables.
Soybeans are also rich in omega-3 fats, polyunsaturated fats, various antioxidants, phytochemicals, and fiber.
Soybeans contain vitamins B1 and B2, as well as vitamins E and K. They are also rich in phosphorus, iron, zinc, copper, manganese, potassium, and sodium.
Known for their protein-rich properties, soybeans are used in many areas.
Today, soybeans, grown mostly in Asia, South and North America, are used not only as food but also as raw materials in the animal feed, pharmaceutical, alcohol, fertilizer and oil industries.
